Watch Me Eat Wednesday

I know I have been slacking on my food post but I have come bearing gifts!

Over the weekend I went to the Farmer' Market and got some fresh veggies and I had to stop at El Bolillo Bakery for some Tres Leche Cake.

While I was at the Farmer's Market I picked up some eggplant and hit up Pinterest to find a recipe. I love finding recipes that are simple and easy like this one. The eggplant combined with tomato, feta and basil is amazing! If you enjoy eggplant I suggest this recipe. 

Roasted cauliflower, Manchurian-style

So I believe that cauliflower is broccoli's big brother. As a kid and a teenager I hated cauliflower but since then I have grown to love cauliflower and I kind of cheat on broccoli with it. If you do not care for cauliflower then you will probably love this recipe because it is freaking amazing!

Watch Me Eat Wednesdays

Hey guys! So this week has been sort of a blur filled with sleeping and reading so I totally forgot to find a recipe for today (eeek)! Instead of giving up and just getting something from a drive-thru I checked the freezer and found some fish (Tilapia) and decided to use what I had in the fridge to make one of my favorite summer meals. 

Mango Fiesta Tilapia 

Ingredients:
Mango Pico de Gallo 
Tilipia 
Oregano 
Extra Virgin Olive Oil 
Salt 
Red Pepper (optional) 

I purchased the Mango Pico de Gallo at HEB already made; you can also find this at Central Market or Whole Foods. First I coated the fish with a tablespoon of EVOO and a pinch of salt. I then topped the fish with the Mango Pico de Gallo, Oregano, and Red Pepper and placed the fish in foil. I cooked the fish on 400 degrees in a convection oven for 25 minutes. This is an extremely simple recipe and I love it.

Saturday afternoon I made my version of Veggie Laksa. This recipe is great and budget friendly as it only calls for 8 ingredients. (click the link for the recipe)


I used Japanese Udon Noodles because I was unable to find Singapore Noodles at my local grocery store. 

Basil, Red Curry Paste, and Coconut Milk. 

Red Bell pepper, Zucchini and Carrots.
